Fresh Caprese Stuffed Avocado

Cut the avocados in half and remove the pits. Scoop out some of the flesh from each half to create a larger cavity, leaving a border around the edges.
In a bowl, combine cherry tomatoes, mozzarella balls, and chopped basil.
Drizzle olive oil and balsamic vinegar over the tomato mixture. Season with salt and pepper, and toss gently to coat.
Spoon the caprese salad mixture into the avocado halves, dividing evenly.
Serve immediately as a refreshing appetizer or light lunch.
