Filet Mignon with Boursin and Mushrooms

Preheat your oven to 200°C.
In a frying pan, heat the olive oil and sear the filets mignon on each side until golden brown. Set aside.
In the same pan, add the shallots and garlic and sauté until translucent.
Add the sliced mushrooms and sauté until golden brown.
Deglaze the pan with the white wine and reduce by half.
Reduce the heat and stir in the Boursin until the cheese is melted and the sauce is smooth.
Return the fillets to the pan, cover with the sauce and bake for 10 minutes.
Serve hot, garnished with chopped fresh parsley.
