Crispy Air Fryer Coconut Chicken

Preheat your air fryer to 400°F (200°C) for about 5 minutes.
Pat the chicken tenders dry with paper towels.
Set up a breading station with three shallow bowls. In the first bowl, place the flour. In the second bowl, place the beaten eggs. In the third bowl, combine the shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and black pepper.
Dredge each chicken tender in the flour, shaking off any excess. Dip the chicken into the beaten eggs, allowing any excess to drip off. Then, coat the chicken in the coconut mixture, pressing lightly to adhere.
Lightly spray the air fryer basket with cooking spray. Arrange the breaded chicken tenders in a single layer in the basket, being careful not to overcrowd. Lightly spray the tops of the chicken with cooking spray.
Air fry the chicken at 400°F (200°C) for 12-15 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
Serve immediately with sweet chili sauce and lime wedges.
