Turkey and Havarti Croissant Sandwich with Dijon Mustard

Preheat oven to 350°F (175°C).
Place croissant halves on a baking sheet, cut sides up.
Spread Dijon mustard on one side of each croissant half, and mayonnaise on the other side.
Layer each bottom half of the croissants with spinach leaves, tomato slices, Havarti cheese, and turkey slices.
Season with salt and pepper to taste.
Place the top halves of the croissants over the fillings.
Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and the croissants are lightly toasted.
Remove from oven and serve warm.
