Savory Cheesy French Pinwheels

In a bowl, combine the shredded Gruyère cheese, grated Parmesan cheese, and fresh thyme leaves.
Season with salt and pepper to taste.
Assemble the Pinwheels:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheet on a lightly floured surface.
Spread a thin layer of Dijon mustard over the puff pastry.
Evenly sprinkle the cheese mixture over the mustard-covered pastry.
Starting from one edge, tightly roll the puff pastry into a log.
Slice the log into 1/2-inch thick pinwheels and place them on the prepared baking sheet.
Bake the Pinwheels:
Brush the tops of the pinwheels with the beaten egg.
Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
Remove from the oven and let cool slightly before serving.
