Rhubarb Desserts

Prepare the Rhubarb Filling:
In a large saucepan, combine the chopped rhubarb, granulated sugar, water, and lemon juice. Cook over medium heat, stirring occasionally, until the rhubarb is tender and the mixture is thickened, about 10-15 minutes. Remove from heat and stir in the vanilla extract.
Make the Crumble Topping:
In a medium bowl, mix together the flour, rolled oats, brown sugar, melted butter, cinnamon, and salt until crumbly.
Assemble and Bake:
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish. Pour the rhubarb filling into the prepared dish and spread it evenly. Sprinkle the crumble topping over the rhubarb filling.
Bake:
Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly. Let cool slightly before serving.
Serve:
Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
