Peanut Butter Pie with Chocolate Ganache

Prepare the crust:
In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
Refrigerate the crust for at least 30 minutes to set.
Prepare the filling:
In a large bowl, beat the peanut butter, powdered sugar, cream cheese, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the peanut butter mixture until well combined.
Pour the filling into the prepared crust and smooth the top with a spatula.
Refrigerate the pie for at least 2 hours, or until set.
Prepare the chocolate ganache:
In a microwave-safe bowl, combine chocolate chips and heavy cream.
Microwave in 30-second intervals, stirring after each, until the chocolate is melted and the mixture is smooth.
Let the ganache cool slightly, then pour it over the chilled pie, spreading it evenly to cover the filling.
Chill and serve:
Refrigerate the pie for another 30 minutes to set the ganache.
Slice and serve chilled.
