Nutritious Chicken Taco Casserole

Preheat your oven to 375°F (190°C).
Cook the Chicken:
In a large skillet, heat olive oil over medium heat.
Add the diced chicken and cook until no longer pink, about 5-7 minutes.
Remove chicken from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the onion, garlic, and bell peppers. Cook until the vegetables are tender, about 5 minutes.
Add the black beans, corn, diced tomatoes, green chilies, taco seasoning, and chicken broth. Stir to combine.
Assemble the Casserole:
Add the cooked chicken and cooked brown rice to the skillet. Stir until well combined.
Season with salt and pepper to taste.
Transfer the mixture to a greased 9x13 inch baking dish.
Sprinkle the shredded cheddar cheese evenly over the top.
Bake the Casserole:
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove the casserole from the oven and let it cool slightly.
Garnish with fresh cilantro and any additional toppings you desire.
Serve warm and enjoy!
