Grilled Vegetables with Fresh Chimichurri and Creamy Burrata

Prepare the Chimichurri Sauce:
In a bowl, combine the parsley, cilantro, garlic, olive oil, red wine vinegar, lemon juice, and red pepper flakes.
Mix well and season with salt and pepper to taste. Set aside to allow the flavors to meld.
Grill the Vegetables:
Preheat the grill to medium-high heat.
Toss the zucchini, yellow squash, red bell pepper, red onion, and asparagus with olive oil, salt, and pepper.
Place the vegetables on the grill and cook for 5-7 minutes per side, or until tender and charred.
Remove the vegetables from the grill and arrange them on a serving platter.
Assemble the Dish:
Tear the burrata cheese into pieces and scatter over the grilled vegetables.
Drizzle the chimichurri sauce over the top.
