Dark Chocolate Orange Biscotti

Shape and bake the biscotti:
Divide the dough in half and shape each half into a log about 12 inches long and 3 inches wide.
Place the logs on the prepared baking sheet, leaving space between them.
Bake for 25-30 minutes, or until the logs are golden and firm to the touch.
Remove from the oven and let cool for 10 minutes.
Reduce the oven temperature to 325°F (165°C).
Slice and bake again:
Carefully transfer the logs to a cutting board and use a serrated knife to slice them diagonally into 1/2-inch thick slices.
Place the slices cut side down on the baking sheet.
Bake for an additional 10-15 minutes, or until the biscotti are golden and crisp.
Let cool completely on a wire rack.
Add the topping:
Dip one end of each biscotti into the melted dark chocolate.
Place the biscotti on a sheet of parchment paper to set.
Sprinkle with additional orange zest if desired.
