Classic Beef Barley Soup

In a large pot, heat olive oil over medium-high heat. Add beef and cook until browned on all sides.
Add onions and garlic to the pot and sauté until onions are translucent.
Stir in carrots, celery, thyme, bay leaves, and beef broth. Bring to a boil.
Reduce heat to low and add barley. Cover and simmer for about 1 hour or until barley and beef are tender.
Season with salt and pepper to taste. Remove bay leaves before serving.
