Bordeaux Cherry Doughnuts with Dark Chocolate Glaze

Prepare the Dough:
In a large bowl, combine the warm milk, yeast, and a pinch of sugar. Let sit for 5-10 minutes until frothy.
Add the melted butter, eggs, remaining sugar, salt, and vanilla extract to the yeast mixture. Mix well.
Gradually add the flour, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Make the Cherry Filling:
In a saucepan, combine the chopped Bordeaux cherries, sugar, cornstarch, and lemon juice.
Cook over medium heat, stirring frequently, until the mixture thickens and the cherries soften. Remove from heat and let cool.
Form and Fry the Doughnuts:
Punch down the risen dough and roll it out to about 1/2-inch thickness on a floured surface.
Cut out doughnut shapes using a doughnut cutter or two round cutters of different sizes.
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches until golden brown, about 1-2 minutes per side. Drain on paper towels.
Fill the Doughnuts:
Once the doughnuts are cool enough to handle, use a piping bag with a small round tip to fill each doughnut with the cherry filling.
