Prepare the crust:
In a large bowl, combine flour, salt, and granulated sugar.
Cut in the butter until the mixture resembles coarse crumbs.
Add ice water, 1 tablespoon at a time, until the dough just comes together.
Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
Prepare the filling:
In a large bowl, combine apples, blackberries, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and lemon zest. Toss gently to mix well.
Assemble the pie:
Preheat your oven to 375°F (190°C).
Roll out one disk of dough on a floured surface to fit a 9-inch pie dish. Press into the dish and trim any excess dough.
Pour the fruit mixture into the crust, mounding slightly in the center.
Roll out the second disk of dough and place it over the filling. Trim, fold, and crimp the edges to seal.
Cut a few slits in the top crust to allow steam to escape.
Brush the top crust with beaten egg and sprinkle with coarse sugar.
Bake the pie:
Place the pie on a baking sheet and bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbly.
If the crust starts to brown too quickly, cover the edges with foil.
Let the pie cool completely on a wire rack before serving.
