Apple Pie Cupcakes

Prepare the Cupcakes:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool completely.
Prepare the Apple Filling:
In a medium saucepan, combine the diced apples, sugar, cinnamon, and lemon juice. Cook over medium heat until the apples are tender, about 10 minutes.
In a small bowl, whisk together the cornstarch and water. Add this mixture to the saucepan and cook, stirring constantly, until the filling thickens, about 2 minutes. Remove from heat and let cool.
Prepare the Frosting:
In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Add the vanilla extract and heavy cream, beating until the frosting is light and fluffy.
