Recipes for Summer Entertaining

1/2 red onion, finely chopped
1 jalapeño, seeded and minced
Juice of 2 limes
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Directions:
Lemon Herb Grilled Chicken:
In a bowl, whisk together olive oil, lemon juice, garlic, thyme, rosemary, salt, and pepper.
Place chicken breasts in a resealable plastic bag and pour marinade over them. Seal the bag and refrigerate for at least 30 minutes.
Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side, or until fully cooked. Let rest before slicing.
Watermelon Feta Salad:
In a large bowl, combine watermelon, feta cheese, and mint.
Drizzle with balsamic glaze and season with salt and pepper. Toss gently to combine.
Mango Avocado Salsa:
In a medium bowl, combine mangoes, avocados, red onion, jalapeño, lime juice, cilantro, salt, and pepper.
Mix gently and serve immediately.
