Pan-Fried Potatoes with Smoked Polish Sausage and Caramelized Onions

Heat the olive oil in a large skillet over medium heat.
Add the sliced onions and sauté until they start to become translucent and golden, about 5-7 minutes.
Increase the heat to medium-high and add the sliced potatoes to the skillet. Cook, stirring occasionally, until the potatoes are golden and crispy, about 10-15 minutes.
Add the sliced sausage to the skillet and sprinkle with paprika, salt, and pepper. Cook together with the potatoes and onions for another 5-7 minutes, until the sausage is browned and heated through.
Remove from heat, garnish with chopped parsley, and serve hot.
