Mushroom and Havarti Turnovers

Prepare the Filling:
In a skillet, heat olive oil over medium heat. Add chopped mushrooms and onions, and sauté until softened and golden brown, about 5-7 minutes.
Add minced garlic, and cook for an additional 1 minute until fragrant. Season with salt and pepper to taste. Remove from heat and let cool slightly.
Assemble the Turnovers:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet into 4 squares.
Place a spoonful of the mushroom mixture onto one half of each square, leaving a border around the edges.
Sprinkle shredded Havarti cheese over the mushroom mixture.
Fold and Seal the Turnovers:
Fold the pastry over the filling to create a triangle shape. Press the edges firmly with a fork to seal. Repeat with remaining squares.
Bake the Turnovers:
Place the turnovers on the prepared baking sheet. Brush the tops with beaten egg and sprinkle with sesame seeds or poppy seeds if desired.
Bake in the preheated oven for 15-18 minutes, or until the turnovers are golden brown and puffed up.
Serve:
Remove from the oven and let cool slightly before serving. Enjoy warm as a delicious appetizer or light meal!
