Gourmet Savory Crepes

In a mixing bowl, whisk together the flour, eggs, milk, water, melted butter, salt, and pepper until smooth. Let the batter rest for 10-15 minutes.
Heat a non-stick skillet over medium heat. Pour a small ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly browned. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter to make about 6-8 crepes.
In a separate skillet, sauté the mushrooms until golden brown and tender. Set aside.
To assemble, place a few slices of cooked turkey breast and some sautéed mushrooms in the center of each crepe. Sprinkle with shredded Swiss cheese.
Roll up the crepes and place them seam-side down on a baking dish. Sprinkle additional Swiss cheese on top.
Bake in a preheated oven at 350°F (175°C) for 10-15 minutes, or until the cheese is melted and bubbly.
Garnish with chopped fresh parsley before serving.
