French Apple Cake with Maple Ginger Custard Sauce

1 tablespoon grated fresh ginger
4 large egg yolks
1/4 cup (50g) granulated sugar
1 teaspoon vanilla extract
Directions:
Preheat the oven to 350°F (175°C). Grease a 9-inch (23cm) springform pan and line the bottom with parchment paper.
Make the cake batter: In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Combine the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the apple slices.
Bake the cake: Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then remove the sides of the pan and transfer the cake to a wire rack to cool completely.
Make the custard sauce: In a medium saucepan, heat the milk, cream, maple syrup, and grated ginger over medium heat until it just begins to simmer.
