Elegant Poppy Seed Crêpes

In a mixing bowl, whisk together the flour, poppy seeds, eggs, milk, melted butter, sugar, and salt until smooth. Let the batter rest for 10-15 minutes.
Heat a non-stick skillet over medium heat. Pour a small ladleful of batter into the skillet, swirling to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly browned. Flip and cook for another 1-2 minutes on the other side. Repeat with the remaining batter to make about 6-8 crêpes.
Spread a layer of lemon curd over each crêpe, leaving a small border around the edges.
Add a dollop of ricotta cheese on top of the lemon curd.
Roll up the crêpes and place them seam-side down on a serving plate.
Garnish with fresh berries and dust with powdered sugar before serving.
