Easy Chocolate Mousse

Place the chopped dark chocolate in a heatproof bowl. Pour the hot water over the chocolate and stir until smooth and melted. Set aside to cool slightly.
Whip the Cream:
In a large bowl, whip the chilled heavy cream with an electric mixer on medium-high speed until soft peaks form. Add the granulated sugar and vanilla extract, then continue whipping until stiff peaks form.
Incorporate Chocolate:
Gently fold the melted chocolate into the whipped cream until well combined. Be careful not to deflate the mixture; fold gently using a spatula.
Chill and Serve:
Spoon the chocolate mousse into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set.
Garnish and Enjoy:
Before serving, dust with cocoa powder or sprinkle with chocolate shavings if desired.
