In a large skillet, cook the ground beef and onion over medium heat until the beef is browned and the onion is soft. Drain any excess fat.
Stir in the shredded cheddar cheese, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper. Cook until the cheese is melted and everything is well combined. Remove from heat.
Lay an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the beef mixture onto the center of the wrapper. Add a few pieces of chopped pickles if using.
Fold the bottom corner up over the filling, then fold in the sides, and roll up tightly. Use a bit of water to seal the edges. Repeat with the remaining wrappers and filling.
Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, fry the egg rolls in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
Serve the egg rolls hot, garnished with sesame seeds if desired.
