Burst Tomato Burrata Pasta

Cook the Pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
Cook the Tomatoes:
While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant but not browned.
Increase the heat to medium-high and add the cherry tomatoes. Season with salt, black pepper, and red pepper flakes. Cook for about 10-12 minutes, stirring occasionally, until the tomatoes begin to burst.
Once the tomatoes have burst and released their juices, reduce the heat to low and stir in the fresh basil.
Combine and Serve:
Add the cooked pasta to the skillet with the tomatoes. Toss to combine and heat everything through.
Tear the burrata into pieces and gently fold into the pasta, allowing it to melt slightly.
Serve the pasta with extra basil leaves, grated parmesan, and a drizzle of extra virgin olive oil.
