Blackberry Lemon Curd Bars

Prepare the Crust:
Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a medium bowl, mix the flour, sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Press the mixture evenly into the bottom of the prepared pan. Bake for 20-25 minutes, or until lightly golden. Remove from oven and set aside.
Prepare the Lemon Curd:
In a medium bowl, whisk together the eggs, sugar, lemon juice, and lemon zest until smooth.
Gradually add the melted butter, whisking continuously until well combined.
Pour the lemon mixture over the baked crust and bake for an additional 20-25 minutes, or until the filling is set and just starting to brown around the edges. Remove from oven and let cool completely.
Prepare the Blackberry Layer:
In a small saucepan, combine the blackberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the blackberries have broken down and the mixture has thickened, about 5-7 minutes. Remove from heat and let cool slightly.
Spread the blackberry mixture evenly over the cooled lemon curd layer.
Chill and Serve:
Refrigerate the bars for at least 2 hours before cutting into squares. Use the parchment paper overhang to lift the bars out of the pan and onto a cutting board.
Cut into squares and serve. Store any leftovers in the refrigerator.
