Banana Strawberry Cheesecake Fantasy

Prepare the Crust:
Preheat your oven to 325°F (160°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and 3 tablespoons of sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then set aside to cool.
Make the Cheesecake Filling:
In a large bowl, beat the cream cheese and 1 cup of granulated sugar until smooth. Add the vanilla extract and eggs, one at a time, beating well after each addition. Fold in the mashed bananas until fully incorporated.
Assemble and Bake:
Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes, or until the center is set and the edges are lightly browned. Let the cheesecake cool in the oven with the door slightly open for 1 hour, then refrigerate for at least 4 hours or overnight.
Prepare the Strawberry Topping:
In a small saucepan, heat the strawberry jam until smooth. Toss the sliced strawberries in the warm jam until they are well coated. Let cool slightly.
Garnish and Serve:
Before serving, arrange the coated strawberries on top of the cheesecake. Garnish with fresh banana slices and additional strawberries if desired. Slice and enjoy!
