Zucchini pancakes with cheese, perfect for any occasion

Prepare a pancake batter using flour, eggs and milk. Coarsely grate the zucchini, dice the onion and mix both into the batter. Season to taste with salt, pepper and thyme.
Heat some oil in a pan and use the batter to make pancakes. It's best to do this at a medium temperature so that they bake through nicely.
We always serve it with a green salad - a delicious summer meal.
