4-Pour the vegetables (onion and peppers) over medium heat in a frying pan with a splash of oil. Add a little salt and ground black pepper. Move the vegetables occasionally so they cook evenly.
6-Prepare the eggs. Peel them and cut them in half.
7-Assemble the Turkish eggs. Add the tomato slices to the pan of vegetables when they begin to brown but have not changed color. Add a pinch of salt and oregano to the tomato. Put grated cheese on top. And a half of egg on top of each tomato. Sprinkle a pinch of paprika on top of each egg. Lower the heat to number two. Add grated cheese to taste on top. Cook covered over low heat for 15 minutes.
8-Finish the dish by sprinkling a pinch of oregano on top
