- 4 pounds russet potatoes, peeled and cut into 1-inch pieces
- 1 cup sour cream
- 1/2 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 cup shredded cheddar cheese
- 1/2 cup sliced green onions, plus more for garnish
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
Instructions:
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. Place the potatoes in a large pot and cover with cold water. Bring to a boil and then reduce the heat so that it is simmering. Cook the potatoes until they are tender. This should take about 15 to 20 minutes.
3. Drain the potatoes and return them to the pot. Add sour cream, milk, melted butter, garlic powder, paprika, salt, and pepper. Mash the potatoes with a potato masher until well combined but still have some texture.
4. Fold in the shredded cheddar cheese and sliced scallions until evenly distributed throughout the potato mixture.
5. Transfer the potato mixture to a greased 9x13-inch baking dish and smooth the top with a spatula.
6. Bake in the preheated oven for 20-25 minutes, or until the top is lightly golden and the edges are blistered.
7. Garnish with more sliced scallions before serving.
