Easy Tunisian fricassee recipe to prepare

Start by preparing the sourdough. In a small bowl, put the yeast cube, 200 g of flour and a little lukewarm water. Cover with salt and leave to rise for 15 minutes, then add the eggs, mix a little. Add the oil, then add the remaining water (the mixture will become liquid) and gradually add the flour until the dough is no longer sticky. it must remain flexible.
Cover and leave to rise for 1 hour, degas, take the amount of a golf ball of dough and form sausages out of it. Place on a baking tray, cover and leave to rise for 15 minutes.
Fry on both sides for 5 to 10 minutes over medium-high heat so that the fricassee are well cooked inside. Place them on absorbent paper before filling.
Wash the potatoes and cook for about 25 minutes. Boil the eggs in water for 15 minutes once the water boils.
Drain the oil from the tuna in a colander, then put it in a bowl and set aside. Drain the olives, cut them in two and then reserve them in a bowl.
5. Cut the potatoes into cubes and salt them. Remove the shell from the eggs and then cut them into slices. Prepare a hariss or mayonnaise mixture in a bowl. Once the fillings are ready, you can start filling the fricassee.

6. Cut a fricassee in half widthwise without touching the other end.

7. Spread the harissa mayo sauce, add diced potatoes, tuna, a few egg slices and olives. Repeat the process until the end.
