Heat sesame oil and canola oil in a large skillet.
Add chicken and fry until fully cooked and brown.
Add garlic and ginger and saute for 1 to 2 minutes. (Add oil if needed).
In  bowl, blend soy sauce / brown sugar, bourbon, & rice wine.vinegar.
Add the chicken sauce and let it simmer over a low heat. Cook for 2 to 3 minutes.
Meantime, in  bowl, whisk jointly cornstarch & water.
Slowly add the cornstarch mixture to the sauce and stir frequently until it thickens, about 2-3 minutes.
If the sauce needs to thicken, add more cornstarch.
Serve directly with sesame seeds & green onions for decorate, if wanted .
