Arizona sunshine lemon pie recipe

Take the pie crust out of the freezer or make your own. I utulzie a frozen deep plate pie crust & it worke great. I putting it on a cookie sheet for support. If you are using a homemade pie crust in a glass dish, you don't need to do this.
Preheaat oven 350 degrees.
Washing lemon very well, & chop it also removing all seeds. (No need to peel it, you'll blend the whole lemon!) Soak it in your blender.
Add eggs, butter, vanilla and sugar. until a smooth mixture. I start at powder 5 and then go up to 10.
Pour the mixture into your pie. Bake for 40 minutes or until cooked through.
Let the pie cool, then cool in the refrigerator.
To top
Place bowl and paddle in freezer for 20 minutes (not mandatory). Pour the whipping cream and sugar. Whip until peaks form.
Cut the pie into slices and serve chilled with a little whipped cream on top. It can be enjoyed warm (it won't be firm) or at room temperature but we prefer it cold.
