Old Fashioned Pancakes

Step 1
Place a heat-resistant dish in a warm (200 degrees) oven.
Step 2
In a bowl, beat together flour / sugar, salt, also baking powder. Making a hole in center of flour min . Adding eggs, milk and 2 tablespoons of butter. Whisk from the center, mixing the flour slowly. Let mixture for 11 min .
Step 3
Heat a large cast-iron skillet or favorite baking tray over medium-high heat. Stir the remaining tablespoon of butter into the skillet (or use the oil to cover the baking tray) and immediately pour a quarter cup of the mixture into each pie. When the bubbles rise to the surface, flip the pancakes, reduce the heat a little, and cook until the bottoms are golden and the centers are cooked, for about a minute. (You rarely make the first pie because it takes a while to get into the groove with the heat, fat, and dough.)
Step 4
When the pancakes come out of the pan, place them on a hot plate in the oven until ready to serve. Serve a stack of 3 muffins, topped with more butter and maple syrup.
