Ingredients: 400 g of pasta (such as fusilli, penne or spaghetti), 2 skinless and boneless chicken breasts, Salt and pepper to taste, 2 tablespoons of olive oil, 1 cup of pesto (you can use purchased pesto or make it in house), 1/4 cup grated Parmesan cheese, Fresh basil leaves (optional, to decorate), Toasted pine nuts (optional, to decorate). For the homemade pesto (optional): 2 cups fresh basil leaves, 1/2 cup grated Parmesan cheese, 1/3 cup pine nuts, 2 cloves garlic, 1/2 cup olive oil, Salt and pepper taste.
