Use 1 pound ground beef.
Onion, 1/2 cup diced
Taco Seasoning Mix, one packet.
2 cups cheddar cheese, grated
To make them easier to spread, warm a can of refried beans in the microwave.
1 cup cooked rice (Minute Rice was the brand I used)
I will just use one can of drained Mexican corn mix. about half a can
A quarter to half a dozen large flour tortillas
Choose mild or spicy salsa; 8 ounces of thick, chunky salsa is sufficient.

Apply cooking spray to a springform pan, round cake pan, or casserole dish.
Reduce fat by sautéing ground beef and onions.
After adding the taco seasonings, cook as directed on the package.
Spread a tortilla on the bottom of the baking dish. Top with a third of the beans. Layer a third of the meat on top. Finally sprinkle with some cheese.
Half the salsa, half the corn, half the cheese and half the second tortilla layer.
The third layer consists of tortillas, beans, meat and cheese.

After 40 minutes of baking at 350 degrees without foil, uncover the lid and bake for another 10 to 15 minutes. Let rest for 5 minutes before cutting. After baking, garnish with sour cream, chopped onions and shredded lettuce if desired.
