Stir until the sugar is completely dissolved. This will take approximately 5 minutes. You can check the cooking by rubbing the mixture between your fingers or by bringing it to 65°C if you have a kitchen thermometer.
Whip the meringue:
Pour the sugar mixture into the bowl of a mixer and beat at high speed for about 5 to 6 minutes until a firm, stable meringue forms.
Once the mixture is whipped, carefully add the starch to keep the meringue soft.
