Directions:

  1. Melt the butter in a saucepan over low heat.
  2. Place the shortbread cookies in a plastic bag and crush them into fine crumbs with a rolling pin. Alternatively, you can also use a blender.
  3. Add the melted butter to the shortbread crumbs and mix well until a uniform mixture forms.
  4. If desired, add the chopped nuts and raisins or dried fruit and stir well.
  5. Roughly chop the chocolate and let it slowly melt in a heatproof bowl over a water bath. Be careful not to get water into the chocolate as this will cause it to clump.
  6. Once the chocolate has melted, stir it evenly into the cookie crumb mixture until everything is well mixed.
  7. Pour the mixture onto a baking tray lined with baking paper or into a flat dish and smooth it out.
  8. Place the cookies in the refrigerator for at least 2 hours until they have set.
  9. After cooling, cut the cookies into pieces of any size and garnish with powdered sugar, coconut flakes, chopped nuts or other toppings if desired.
  10. Enjoy your delicious, homemade no-bake cookies!
