1/2 cup evaporated milk
1/2 cup light corn syrup
1.5 cups granulated sugar
2 cups pecans 2
cups sweetened shredded coconut
1 cup brown sugar
1/2 cup unsalted butter
1 teaspoon vanilla extract
1/2 teaspoon salt
Instructions:
1. In a pot granulated sugar, Mix together brown sugar, evaporated milk, corn syrup and butter. Heat and stir until completely combined.
2. Bring to a boil and let stand for 3 minutes. Remove from heat.
3. Stir in vanilla extract and salt.
4. Gradually add shredded coconut and pecans. Stir for 3-4 minutes until well mixed and slightly thickened.
5. Using a tablespoon or scoop, portion the mixture onto baking sheets lined with baking paper.
6. Allow the cookies to cool and solidify at room temperature or in the freezer. Serve while solidified.
