1 pound yams, unpeeled but thoroughly scrubbed
½ medium red bell pepper, cut into thick strips
¼ cup vegetable or canola oil
1 teaspoon mustard seeds
1 pinch cayenne pepper
1 pinch ground cinnamon
1 pinch ground cumin
⅓ cup walnut halves
3 tablespoons freshly squeezed lime juice
1 teaspoon sesame oil
½ teaspoon salt
½ cup finely chopped red onion
2 to 3 sprigs cilantro, chopped
