How to prepare Holy Week Roscos
To start preparing this recipe, the first thing we must do is zest a lemon. We put the zest we have obtained into a large bowl and add the 9 eggs.
We beat well (better if we do it with the mixer), adding the 27 tablespoons of wine (there are 3 for each egg).

Next we add the 27 tablespoons of sugar and another 27 of oil (there are also 3 for each egg). And later we added three envelopes of yeast and another three of baking soda. We take the mixer again and beat all the ingredients well.
When they are well mixed, we add the flour very slowly. As we add it, we stir with a wooden spoon. The resulting dough should be manageable, without being too thick.
When we have a compact dough, we sprinkle a little flour on the counter and continue working it with our hands for a few minutes.
We take a small bowl and put a little oil there. We wet our fingers and take a little dough, stretching it so that it surrounds two of our fingers and then sealing the edges. Keep in mind that the hole must be large enough, because if we make it small it will disappear when we fry the donuts.
As we get the donuts ready, we place them on the counter where we have worked the dough.
When we have them all done, we cover the base of a large frying pan with plenty of oil and heat it over medium heat. When we see that the oil is hot enough, but without smoking, we lower it, and fry the donuts on both sides, turning them when they are already golden brown on one side.
In another bowl we add sugar. As we remove the donuts from the oil, we let them cool for a few minutes until we can pick them up with our fingers and then we pass them through the sugar, leaving them in a deep, clean and dry container. And ready to eat!
