Ingredients
For the Chocolate Cake
2 cups sugar
2 cups all purpose flour
3/4 cup cocoa
2 tsp . baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1 cup soured milk (just add a tablespoon of vinegar or lemon juice to the milk)
1 cup brewed black coffee, (or prepare a single cup of instant coffee)
1/2 cup vegetable oil
1 tsp vanilla extract
For the Caramel Coconut Pecan Filling
1 cup brown sugar
1 cup evaporated milk (undiluted, straight from the can)
3 egg yolks
1/2 cup butter, melted
1 tbsp vanilla
2 cups dried coconut, toasted
1 1/2 cups pecans, toasted and rightly chopped (or walnuts)
For the Chocolate Frosting (optional)
1 cup chocolate chips
4 cups icing sugar powdered sugar
- 4 tbsp cocoa
- 1 cup butter
- 2 tsp vanilla extract
- 3 tbsp milk (approximately)
