- Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside, reserving some of the cooking water.
- While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and saute until fragrant but not brown, about 1-2 minutes.
- Add the shrimp and cook, stirring occasionally, until pink and cooked through, about 3-4 minutes.
- Add the cooked pasta to the pan and mix well, adding some of the reserved cooking water as needed to thin the sauce and coat the pasta.
- Stir in the chopped parsley and season with salt, pepper and optional chili flakes.
- Portion the garlic-shrimp pasta onto plates and sprinkle with freshly grated Parmesan.
