Garlic Shrimp Pasta

  • Directions:
    1. Cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside, reserving some of the cooking water.
    2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and saute until fragrant but not brown, about 1-2 minutes.
    3. Add the shrimp and cook, stirring occasionally, until pink and cooked through, about 3-4 minutes.
    4. Add the cooked pasta to the pan and mix well, adding some of the reserved cooking water as needed to thin the sauce and coat the pasta.
    5. Stir in the chopped parsley and season with salt, pepper and optional chili flakes.
    6. Portion the garlic-shrimp pasta onto plates and sprinkle with freshly grated Parmesan.
