1-Preheat the oven to 180°C.
2-For the cake, beat the butter with the sugar and the lemon zest until creamy. Add the eggs one by one and the vanilla. Alternate the dry ingredients with the milk and beat until you obtain a homogeneous and smooth mixture.
3-Pour the preparation onto a greased and floured baking tray. Smooth with a spatula and bake for about 15 minutes or until cooked. Cool and cut two cake discs with a ring. Reserve.
For the pastry cream, in a bowl, beat the yolks with the sugar and starch until white. Booking.
4-Heat a small pot over medium heat with the milk, orange zest and vanilla essence. Temper the yolks with the hot milk and pour into the pot. Cook, stirring constantly, until it thickens and add the gelatin in the form of a thread. Place in a bowl, cover with plastic to prevent cream formation and let cool.
5-For the mango mousse, blend the mango with the lemon juice and reserve ½ cup for the mirror. Beat the cream cheese with the mascarpone cheese, add the blender preparation, icing sugar, zest, coloring, and gelatin.
6-Mix in an enveloping manner with the whipped cream.
7-To assemble, in a 23 cm diameter ring, place a cake disc and add the pastry cream. Refrigerate until set and cover with the mango mousse, place the other cake and refrigerate again until completely set. .
8-For the mirror, mix the mango pulp that you reserved previously, with the gelatin and pour over the cake. Refrigerate until set.
9-For the mango frosting, cream the butter with the cream cheese and icing sugar in the mixer until it forms a frosting. Divide into 4 and add yellow coloring to 3 parts, achieving different intensities.
10-Place in 4 pastry bags and reserve. Cover the sides of the cake with a light layer of white frosting and then with the help of the bags cover with more frosting starting from the bottom up with the white to the most intense yellow.
11-Flatten with a spatula to blend the colors and refrigerate for 20 minutes.
12-Remove the cake from refrigeration, decorate with slices of yellow lemon, mango and yellow frosting chocolates, serve
