1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (adjust to taste)
1/2 teaspoon black pepper
1/2 teaspoon salt
2 large eggs, beaten
Cooking spray or oil for greasing
Directions
1. Heat your oven to 400 degrees F (200 degrees C). Grease a baking sheet with cooking spray or a light oil brush.
2. In a shallow bowl, combine cornmeal, Cajun seasoning, garlic powder, onion powder, cayenne, black pepper and salt.
3. Place the beaten eggs in another shallow bowl.
4. Dip each strip of fish into the beaten eggs, then dip into the seasoned cornmeal mixture. Make sure each piece is well covered.
5. Arrange the coated fish sticks on the prepared baking sheet.
6. Bake in the preheated oven for 20 minutes or until the fish is cooked through and the coating is crispy and golden brown.
7. Serve hot, garnished with lemon wedges if desired.
Variations & Tips
If you don't like the spiciness, you can reduce the amount of cayenne pepper or leave it out completely. For an herbal touch, you can also add a teaspoon of dried thyme or oregano to the cornmeal mixture. If allergies are a concern, a good substitute for the eggs may be a brush of mayonnaise or mustard to help the cornmeal stick to the fish. Finally, feel free to experiment with different types of fish to find the one that best suits your family's tastes!
