SWEET BRIOCHE SPONGE BREAD

Directions:

Prepare the brioche dough and let it rise until it doubles in size.
Preheat the oven to 180°C and grease a bread baking tin.
Beat the eggs and sugar in a bowl until fluffy.
Add flour, baking powder and salt and stir gently until well combined.
Cut the risen brioche dough into small pieces and gently fold into the egg mixture until well combined.
Pour the mixture into the prepared baking pan and smooth it out.
Bake the bread for about 40-45 minutes or until golden brown and a toothpick comes out clean when inserted into the center of the bread.
Remove from the oven and allow to cool slightly before removing from the tin.
Enjoy your sweet brioche sponge bread warm or at room temperature, alone or with your favorite topping!
