Easy Tunisian fricassee recipe to make

Start by preparing the sourdough. Put the yeast cube, 200 g flour and a little lukewarm water in a small bowl. Cover with salt and let rise for 15 minutes, then add the eggs, mix a little. Add the oil, then add the remaining water (the mixture will be liquid) and gradually add the flour until the dough is no longer sticky. it must remain flexible.
Cover and let rise for 1 hour, degas, take a golf ball amount of dough and form sausages out of it. Place on a baking sheet, cover and let rise for 15 minutes.

Fry on both sides for 5 to 10 minutes over medium-high heat so that the fricassee is well cooked on the inside. Place them on absorbent paper before filling.
Wash the potatoes and cook for about 25 minutes. Once the water boils, boil the eggs in water for 15 minutes.
Drain the oil from the tuna in a colander, then place it in a bowl and set aside. Drain the olives, cut them in half, then store them in a bowl.
5. Cut the potatoes into cubes and add salt. Remove the shell from the eggs and then cut them into slices. Prepare hariss or mayonnaise mixture in a bowl. Once the fillings are ready, you can start filling the fricassee.

6. Cut a fricassee in the middle widthwise without touching the other end.

7. Spread the harissa mayo sauce, add diced potatoes, tuna, a few egg slices and olives. Repeat the process until the end.
