4 bratwurst links
1 tablespoon olive oil
1 large onion, sliced
2 apples, cored and sliced
12 ounces apple beer
1 cup sauerkraut, drained
2 teaspoons brown sugar
1 teaspoon cumin
Salt and pepper to taste
Directions
1. Heat the oven 190°C (375°F).
2. In a large ovenproof skillet, heat olive oil over medium-high heat. Add the sausage and fry for about 5-7 minutes until browned on all sides. Remove sausages and set aside.
3. In the same pan, add the sliced onions and apples. Cook for about 5 minutes, or until they begin to soften.
4. Deglaze the pan by pouring in the apple beer and scraping up any browned bits from the bottom of the pan.
5. Add the sausages back to the pan. Add sauerkraut, brown sugar and cumin. Season with salt and pepper.
6. Bring the mixture to a boil, then cover the pan and place in the preheated oven.
7. Let them braise in the oven for about 25-30 minutes, or until the sausages are cooked through.
8. Serve hot with side dishes of your choice.
Variations & Tips
This recipe is very adaptable! If you're not a fan of sweets, you can skip the apples and replace the apple beer with a darker beer for a deeper, savory flavor. If you'd like something spicier, add some crushed red pepper flakes while cooking the onions. If you like it creamier, stir a few spoonfuls of sour cream into the sauerkraut before baking.
