Start by preparing your ingredients: Peel and finely chop the onion into small pieces. Set aside. Wash the parsley and chop it coarsely, then set it aside as well.
Heat a large nonstick skillet over medium-high heat. Add the olive oil and let it heat for a minute.
Add the chopped onion to the pan and sauté for about 4 to 5 minutes, or until the onions are translucent and starting to turn golden brown.

Just before the eggs are completely set, sprinkle the chopped parsley and mix it into the mixture. The residual heat will finish cooking the eggs and slightly wilt the parsley.
Taste the scramble and adjust the seasoning if necessary. Once the eggs are cooked to your liking, remove the pan from the heat.
