Cranberry Cake Recipe

Pour the batter into the prepared pan and spread it out evenly. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean. Let cool.
Frosting:
In a bowl, whisk together 8 oz room temperature cream cheese, 1/2 cup (125 mL) caster sugar, 1 tsp (5 mL) vanilla extract and 1/2 tsp (2.5 mL) orange zest and mix well.
Melt the white chocolate:
Melt 2 tablespoons of white chocolate in the microwave for about 30 seconds in 7-second intervals, stirring in between until there are no lumps until smooth and melted. Transfer to a Ziploc bag and cut off the corner.
Assemble the cranberry
cake Spread the cream cheese frosting with a spatula all over the cooled cake. Sprinkle the 2/3 cup (160 mL) dried cranberries on top. In a zigzag motion, drizzle over the melted white chocolate. Let cool for about 30 minutes to 1 hour, then cut and serve.
