For the filling:
1 can of condensed milk
1/4 cup of lemon juice
2 tablespoons of lemon zest
For the topping:
1 cup of whipping cream
2 tablespoons of powdered sugar
1 teaspoon of vanilla
Preparation:
1-In a large bowl, mix the flour, salt, baking soda and then add the eggs, milk and butter and mix very well.
2-Then add the lemon juice and vanilla and mix very well until it forms a homogeneous dough.
3-Heat a non-stick frying pan over medium heat and lightly grease with oil or butter. Pour in 1/4 cup of the batter and cook for about 2 minutes or until bubbles form on the surface. Flip the pancake and cook for another minute or until golden brown. Repeat with the rest of the dough.
4-For the filling, mix the condensed milk, lemon juice and lemon zest in a small bowl. Booking.
5-For the topping, beat the whipping cream with the icing sugar and vanilla until soft peaks form. Booking.
6-To assemble the pancakes, place one on a plate and spread a tablespoon of filling on it. Cover with another pancake and repeat until forming a tower. Decorate with the cream topping and more lemon zest if desired. Enjoy your delicious lemon pie pancakes.
