Ingredients
2 pounds beef filet or roast beef or stew meat cut into ½-inch pieces (cubes)
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon freshly ground black pepper
1 medium onion, chopped
5 cloves garlic, minced
1 teaspoon Italian seasoning
¼ cup tomato paste
5 cups beef broth
1 pound small potatoes, cut into ½-inch pieces
2 medium carrots, sliced
1 large red pepper or any other color or mix, chopped
1 cup peas greens
optional garnish: chopped fresh parsley, chopped thyme, or chopped green onions
